Options:
- Ethyl ether - fastest, but dangerous and expensive
- Petroleum ether - slightly safer, but requires slightly more time
- Pentane or Hexane
- Ethanol - requires the most time, but cheapest

Semi-Continuous Method --> Soxhlet Extraction
- Requires more time (solvent drips onto sample rather than surrounding it)
- Avoids channeling (channeling results in an incomplete extraction)
- Fast and efficient
- Can cause channeling
- Doesn't require dried sample

Fat Extraction: Soxhlet Method
Phases:
Liquid penetrates weakened matrix, and particle size reduction allows for fat removal.
Phases:
- Solvent heated which vaporizes it
- Vapor rises into the condenser -->liquid phase
- Liquid falls into extraction tube containing thimble with sample
- Sovlent builds for 5-10 minutes, until pressure causes it to siphon back to original flask

Spinach Dip: 0.5503g fat --> 4.2g per serving Nutrition facts: 4g total fat per serving
Pickled Herring: 0.713g fat --> 13.67g per serving Nutrition facts: 8g total fat per serving
Dried Seaweed: 0.859g fat --> 13.842g per serving Nutrition facts: 5g total fat per serving
- Weigh 1 gram of sample
- Tare thimble weight on analytical scale
- Fill thimble, weigh again, and record
- Add 30 mL of ether to round-bottom flask
- Drop thimble into extraction tube at angle
- Start extraction
- Empty flask contents into pre-weighed scintillation vial and evaporate with nitrogen gas.
